胡梅生(1928.2—)，出生于山东省莒南县。擅长中国画、美术教育。
曾任黑龙江省师范学校书法、美术教材主编。曾任黑龙省师范学校书画教研会会长并任书画教材主编暨省教育系统中、高级职称评审委员。现为黑龙江省老年书画研究会艺术顾问，中原书画研究院名誉院长，被称为《世界名人》。
艺术经历国画《油田朝阳》由北京荣宝斋制成木板水印画出版发行，书画作品曾于1982年在荣宝斋展出，名列《荣宝斋当代画家名录》中。1980年以来，四次应邀赴日本进行书画展出和讲学，在日本出版有《胡梅生画集》、《中日友好胡梅生、田久奇峰二人画展集》。由中国美协主编出版有《胡梅生国画作品精选》、由黑龙江美术出版社出版有《柳公权玄秘塔碑集联》、《汉礼器碑集联》等8种字帖，以及《胡梅生访日诗稿》、《胡梅生纪游诗草》、《初学水彩画》——（风景篇）、《胡梅生水彩写生画集》，应太阳岛管理局之邀绘制出版有《太阳岛风光》——水彩写生明信片一套，《太阳岛楹联集锦》书法作品，部分诗作被选入《中华诗词通鉴》、《诗林》中。黑龙江电视台录制播出有《胡梅生书画》电视专题片，哈尔滨电视台录制播出有《胡梅生书法讲座》。国画作品《鱼乐图》被天安门管委会收藏并出版于《天安门珍藏书画集》一书中。
在国内外多次举办书画展览，被收入多部书画名人词典中。出版有译著《怎样使用油画颜料》、《楷书字帖》、《学书法》等。
